Apple Turnovers Recipe

Crisp puff pastry triangles filled with delicious caramelised Pink Lady apple chunks, lovely eaten warm or cold and ideal for an extra energy boost between races on sports day.

  • 2 - Large Pink Lady® apples
  • 20g - Butter
  • 1 - Lemon zest
  • 1 tsp - Ground cinnamon
  • 375g - Pack all butter puff pastry
  • 75g - Demerara sugar
  • 1 - Egg white

Full preparation

  1. Ask an adult to preheat the oven to 200c/gas
  2. Peel the apples, ask an adult to dice them, discard the core
  3. Ask an adult to supervise you while you melt the butter in a saucepan. Add the diced apple, lemon zest, ground cinnamon and a tablespoon of water. Cover and cook the apple over a low heat for 5-8 minutes, stirring occasionally, until the apples soften but still hold their shape. Remove from the heat and set aside to cool
  4. Roll out the pastry on a clean, lightly floured surface until it is a rectangle shape around 5mm thick and use a round bladed knife to cut the rectangle into 6 squares
  5. Place a tablespoon of cooled apple mixture onto the middle of each square, sprinkle with a little Demerara sugar. Brush a little water on the edges of the pastry, fold one corner over to the opposite one to make a triangle and press the edges together to close. Use a fork to make a pattern along the closed edges
  6. Ask an adult to cut a small hole with the tip of a sharp knife to allow the steam to escape. Transfer the turnovers to a greased, lined baking tray
  7. Brush a little egg white over the surface of each triangle to glaze, sprinkle with Demerara sugar and ask an adult to bake these for 20 minutes until golden brown. Allow them to cool before eating them, as the filling will be very hot.
