Indulge your taste buds with this smooth and creamy Christmas mash. Make it that little bit more special with Pink Lady® apples, celeriac and truffle oil.
There's not many things that can beat roast potatoes, but everyone will be going back for a second portion of this absolutely unctuous Christmas mash recipe.

Put the Pink Lady® apples, celeriac, potatoes, bay leaves and garlic into a deep pan and fill with enough water until covered. Bring to the boil and then simmer for 15-20 mins or until the celeriac is very soft.
Drain into a colander removing the bay leaves and leave to cool with no steam (the steam will make it waterlogged).
Once cooled, put the apples, celeriac and potatoes back into the pan and mash to a smooth consistency. Place on the heat and slowly stir in the double cream until it’s thoroughly mixed through.
Finely grate nearly all the truffle, reserving some for the top and add 3 tbsp of the truffle oil. Season with salt and pepper and mix again.
To finish, scoop into a serving bowl, drizzle with the remaining truffle oil, grate over the remaining truffle and serve.
