You might think that waffles are complicated, fussy and not the healthiest recipe to make for breakfast, but you’d be wrong! Put a Pink Lady® spin on this classic breakfast recipe and get your morning off to a great start.

This Pink Lady® apple and vanilla waffle recipe is wonderfully easy to prepare and the waffles are naturally sweetened with Pink Lady® apples. This recipe uses a blend of oats and gluten-free flour with a hint of vanilla and cooked apples, creating a delicious flavour combination and perfectly sweet and fluffy waffles.

Pink Lady® apples are the key ingredient in these waffles. They are gently cooked until soft with a little vanilla extract then blended into the oat-based batter. Once cooked these waffles are both crispy and golden on the outside and are deliciously fluffy on the inside. Simply enjoy the apple and vanilla waffles with fresh slices of juicy and crisp Pink Lady® apples – just perfect!

Full preparation

  1. Add the apple cider vinegar to the almond milk, stir and leave to stand for 10 minutes.

  2. Meanwhile, peel and roughly chop two Pink Lady® apples and add them to a saucepan with two tablespoons of water and the vanilla extract. Cook over a medium heat for 5-8 minutes until the apples have softened. Stir occasionally to prevent them from sticking to the pan.

  3. Once the apples are cooked, add them to a blender with almond milk and apple cider vinegar mix and the remaining waffle ingredients. Blend until the batter is smooth.

  4. Heat the waffle iron and lightly brush with coconut oil. Carefully spoon the waffle mix onto the hot waffle plate, ensuring to spread the mix evenly. Close the lid and cook for 8 minutes. After 8 minutes check the waffles and if not completely golden, cook for a further 2 minutes.

  5. Once the apple and vanilla waffles are ready, place them on a plate and serve with sliced Pink Lady® apples and a drizzle of maple syrup.
